There are two distinct styles of Oolong tea produced characterized by the leaf style : the rolled style and the open leaf-style.In the North we find the open leaf-style, like Bao Zhong Oolong, which is the least oxidized Taiwan Oolong. Another open leaf-style Oolong is Bai Hai or Oriental Beauty, probably one of the most famous Taiwanese Oolongs. After harvest the tea leafs are whitered in two stages. First outside in the sun and next inside . Next there is a bruising stage to activate the oxidation process. Once the required level of oxidation is reached the process is stopped by applying heat.
