This is an exceptional black tea that has captivated us since the sample arrived in our hands and that dazzled us when we tasted it. The Ling family has been growing and manufacturing their tea for three generations. Their garden is located in a valley in a mountainous area that has a monsoon and subtropical climate. Here the environmental conditions for cultivation are extraordinary, since the Baiyun mountain forms a natural barrier, which gives the place a warm, humid environment, with sufficient light and abundant rainfall.
The Ling family grows Jian Mu Dan, also known as Golden Peony, made from the large leaves of the cultivar of the same name. It was created by the Tea Research Institute of the Fujian Academy of Agricultural Sciences by crossing the Tieguanyin and Huangyan varieties. In 2010 it passed national approval and became an indigenous variety of tea tree. The composition of one shoot and two leaves harvested in spring contains approximately 3.9% amino acids, 34.9% tea polyphenols, 4.4% caffeine and 45.2% water.
Jin Mu Dan tea is different from tea from high altitude areas: In the picking season, it needs sufficient sunlight to stimulate its inherent characteristics and has special requirements regarding the time (climate) and timing of its picking. A large temperature difference between day and night, pleasant temperatures and moderate light during the day, and avoiding dew in the early morning or after rain are necessary conditions for picking.
The freshly picked leaves are refined using the Tanyang Congou black tea technique, which has been handed down for generations.
Its dried leaf is black and shiny and gives off a unique orchid and peach aroma. The infusion has a sweet and honeyed taste, with floral, fruity and caramel notes, leaving a long-lasting aftertaste.
It can be re-infused up to 4 or 5 times, finding different aromatic notes. Try letting the infusion cool down until it reaches room temperature so that this extraordinary tea can show itself and you can enjoy its aromatic and flavorful richness.
